Rainbow Cupcakes!!

I have been dying to make the old school classic: Rainbow Cupcakes! However, I was a little afraid to try them, as I'm not much of a baker. I triple love cooking and cook meals at least 4 times a week, but baking....notsomuch.

Anyway, last night, I got brave and decided to try it (if for nothing else but to quell my unending craving for Funfetti cupcakes). It is SO EASY and really FUN! I'll walk ya through it, here we go....

First, you need white cake mix, whatever brand you like. I used Duncan Hines. Prepare it according to the box directions. Once you have the batter mixed, separate it into however many bowls you'll need for the colors you choose. I used 5 colors, so 5 bowls.

You will also need food coloring. I used Betty Crocker Classic Colors (the gel kind) but they also make Neon if you want to try that.
**note: there will only be 4 colors in the food coloring box, but it gives you directions to make other colors on the back of the box.**

In your bowls of batter, add food coloring and stir. Add food coloring, in drops, until you get the color you want. Remember to use separate spoons for each bowl (I say this as I almost starting stirring orange with a spoon that had blue icing all over it).

Almost done! Now, line you muffin pan with paper liners. Next take spoonfuls of each color and drop into the liners. One color on top of the other. You can see how I didn't put even amounts of each color in the liners as I wanted a swirl effect.

Then bake! The box said to bake for 16-21 minutes, but I ended up baking for 26 minutes because I made my cupcakes a little too big :)

Seriously, I was jumping up and down like a little kid at Christmas!

I frosted mine with cream cheese icing and added some sprinkles on top!

Don't be afraid to try these, they are really easy. I can't wait to make these for my nephews, I know they will LOVE them!

I may or may not have eaten 4 of them by the time I went to bed. I'll never tell!

p.s. I used white paper liners and I'm glad I did! You will be able to see the rainbows through the paper and when you take the papers off of the cupcakes they are rainbow colored inside! Who knew?!?

Welcome Lovely Readers!!

Sooo.....I know a lot of people are wondering why I decided to go private. Bluntly: because someone from my ex's family was reading. I didn't feel comfortable with that, and I decided to go private. I felt like too much of my life was "out there" between here, Twitter and Facebook. I have always made sure that my Facebook is locked down like Fort Knox, just based on my career. I've never used my real name on here or Twitter, so I've felt more anonymous. But, given the turbulent and very unsafe past with the ex, I was not at all comfortable with him or anyone in his family knowing anything about me, even if it's just what I'm wearing for the day.

Anyway, moving on....

WELCOME!! I think it's totally awesome that ya'll are reading my blog! I appreciate it so much.

I'll be back soon with some of my random postings :)
